Fermentation Control
The Big Banyan Chardonnay is fermented in stainless steel tanks for 30 days at a temperature below 15°C. The wine is then aged in the tanks for 8 - 10 months.
Oak Integration
Virgin French oak chips are in contact with the wine during aging which produce the nuttiness and creaminess.
