We procure our Sauvignon Blanc grapes from the Akluj region in Maharashtra. The grapes thrive in this hot tropical region, where high daytime temperatures and cool nights help maintain the grape’s naturally high acidity.
Fermentation Control
The Big Banyan Sauvignon Blanc is fermented in stainless steel tanks for 30 days at a temperature below 15°C. The wine is then aged in the tanks for 8 - 10 months.
Oak Integration
There is no oak integration in this white wine.
